t*.sh: remove GIT_CEILING_DIRECTORIES settings
The testing library now handles making sure that the
GIT_CEILING_DIRECTORIES variable is set properly to
avoid accidents.
Therefore remove the explicit settings from the
individual tests that needed it since they are now
redundant.
