docs: For .open callback, clarify TLS and purpose of readonly flag.
In commit c05686f9577f we delayed the .open callback until the NBD
handshake, including TLS authentication, had been completed, but we
didn't update the documentation.
This also clarifies the purpose of the readonly flag.
