recipes: libs/json-c: Simplify source/package name
The established 'fetch' address get the tarball name as "json-c-0.16-20220414.tar.gz",
and the source directory name uses "json-c-json-c-0.16-20220414", we set 'srcdir' for
this build, the package name is based on the tarball name, which is the software name.
